Taco Dip Casserole

I will never make tacos again! This recipe takes the stress out of assembling a taco, and is a spinoff of walking tacos. Super easy and delicious. Serve with bite-sized tortilla chips and sour cream.

Ingredients:

  • cooking spray
  • 1 pound ground beef
  • ¾ cup water
  • 1 (1.25 ounce) package taco seasoning mix
  • 1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
  • 2 tablespoons taco sauce, or to taste
  • 1 (16 ounce) can refried beans, warmed
  • 1 (8 ounce) container sour cream

Directions:

Preheat the oven to 350 degrees F (175 degrees C). Spray an 8- or 9-inch square pan with cooking spray.

Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Stir in water and

mix and bring to a boil. Reduce heat and simmer, stirring occasionally, for 5 minutes.

Transfer ground beef to the prepared pan. Layer with diced tomatoes and green chiles, taco sauce, warm refried beans, sour cream, and Mexican cheese.

Cook, uncovered, in the preheated oven for 20 minutes. Let sit for 10 minutes before serving.
